Last week I got beautiful vegetables delivered from a local organic farm named Moon Bear. I am so excited to be getting a shipment delivered straight to my door for the 12 week season this summer! They are fresh, organic, and delicious!
When I saw the delivery on my door step I quickly unpacked the cooler and placed the veggies in the fridge to deal with later in the day. Of course, I forgot about them! Two days later I went out to get some lettuce and quickly realized the rainbow chard, green onions and kale were SUPER wilted. They were so bad that I was about to toss them in the trash and wait for my next shipment. My beautiful and smart mama told me to wait and started searching for ways to bring back the pathetic looking leafs.

The limp leafs came back to life!
We placed the stems of the kale in water and completely submerged the green onions. They both turned back into strong, beautiful vegetables! The chard came back half way when we submerged the stems so it is now fully submerged to see if that will help.
Follow these simple rules:
1.Thicker leafs: Place veggies upright with stems in water- they absorb more water through the stems
2.Thinner leafs: Fully submerge leafs to rehydrate
You may be thinking, is there a way to keep my veggies fresh longer? Try washing the veggie and then wrapping them in a paper towel and placing in a plastic bag. Leave the ziploc open on the bag. This should help to keep the moisture in the lettuce.
